2020 Lugana DOC “Clay”
This is perhaps one of the most exciting white wines we have tasted in a decade. We love the pure fate of discovery! We picked this wine from a Venetian pizzeria wine list because we were curious as to its higher price given the appellation. What makes this fresh white Lugana stand out? Lingering complexity – it goes on and on offering a multitude of flavour profiles. Obviously, the name creatively originates from the soil composition, but the fruit is sourced from a single parcel on the estate.
Clay is only produced in top vintages. The fruit is hand harvested towards the end of October and goes thru extensive triage. Fermentation is with indigenous yeasts. Batonage on the fine less is done for 1 year in a cement vat and then moved to bottle where it rests for a minimum of one year.

Vinification:
De-stemming with maceration on the skins for 3 days, pressing and fermentation with indigenous yeasts, on fine lees for 1 year in cement and 1 year ageing in bottle.
Tasting:
Straw yellow in colour and lovely floral and fruity aromas. Extremely well structures with strong acidity, sapid and mineral notes.
Try with:
Excellent as an aperitif, ideal with seafood salads, fish-based first courses and shellfish or soups particularly rich and tasty.
