We truly believe that this is perhaps the best Fiano we have ever tasted! Produced from a single biodynamic vineyard, XORÓS is Greek meaning “choir” symbolizing the harmonious blend of many voices into a single melody. It is a mountain wine produced in the lush hills of Avellino, an area blessed with a climate and soils that enhance the aromatic characteristics and complexity of Fiano, one of southern Italy's most popular white grape varieties. Stefani’s Fiano di Avellino DOCG is a masterful exemplification of how the Fiano grape can express itself in a sublime way when it meets an ideal terroir and an expert winemaking hand.
The winemaking is careful and aimed at preserving the integrity and varietal expression of Fiano. Fermentation takes place at controlled temperatures to keep the fresh and complex aromas alive, followed by a short period of maturation on the yeasts to add body and texture to the wine, without overpowering the distinctive character of the grape variety.
In the mouth, the wine reveals an extraordinary harmony between aromatic intensity and structure. The acidic freshness is balanced by a surprising fullness, with flavors that faithfully reflect the aroma, enriched by a light creaminess and an aromatic persistence that leaves a sensation of cleanliness and complexity in the finish. Just as the fermentation and aging process brings together various elements to create a harmonious wine, XORÓS is a unique expression that unites the diverse qualities of the terroir into a perfectly orchestrated wine.

Vinification:
The grapes are destemmed and crushed. Soft pressing. Fermentation in stainless steel tanks at controlled temperatures with natural yeasts for 20 days. 10 months of aging in stainless steel tanks and another 3 months aging in the bottle before going to the market.
Tasting:
The 2022 presents itself with a bright straw yellow color, which anticipates the freshness and liveliness of the wine. On the nose, it expresses a rich and inviting bouquet, with notes of white pulp fruit, such as peach and pear, enriched by nuances of white flowers, aromatic herbs and a hint of minerality that reflects the volcanic and calcareous soil of origin.

Ideal in combination with fish dishes, seafood, light appetizers and fresh cheeses, Stefania Barbot's "Xoros" is also an excellent meditation wine, capable of evolving and revealing new nuances with aging.
