2023 Dolcetto d’Alba
This is a new project for Fogliati and produced from a lovely single vineyard in Castiglione Falletto called Pugnane. The sandy soils are famous for producing grapes with delicate and refined structure – thus dolcetto! This is another example of the minimalized low intervention approach to winemaking. Create the opportunity for the vineyard and its fruit to express themselves by keeping it simple. Once again, less for more. Native yeasts, stainless steel fermentation and aging allows the palate to enjoy the fruit from this organic classic field.

Vinification:
fermented and maceration takes place in stainless steel using native yeast Typically the wine is held in bottle for another 4-6 months.
Tasting:
The color is a ruby red with lively violet reflections. The scent is fresh and pleasantly fruity. Classic and traditional flavours of bright cherry, and raspberry with a fresh and balanced finish. There is a hint of complex spice on the finish which contributes to its complexity.

red meats, herbal cheese – its natural fresh structure provides endless options in terms of pairing from seafood to game fowl.
