2022 Nature Rose Sparkling “Angelica”
This lovely ancestral method rose is a brilliant natural / organic sparkling wine made from 100% Aglianico. The méthode ancestrale sparkling wine production method can be traced back to Limoux, a region in Southwestern France credited with producing the first sparkling wine, Blanquette de Limoux, in 1531. This winemaking technique involves bottling wine partway through its primary fermentation to trap carbon dioxide gas in the bottle, creating a gentle, bubbly carbonation. It also produces sparklers with a bit less alcohol as it does not go thru a second fermentation.
Most of the wines using the ancestral method are sold unfiltered which leaves them quite cloudy and unappealing as sentiment is left in the bottle. Arnaldo originally did not fine the wine after first fermentation both in and out of bottle resulting in this cloudy finish. Now prior to completing fermentation in bottle, there is a light filtration to retain the bright flavour profile and minimum sediment. This is an impressive example of the ancestrale method using Aglianico- the style really pops and is quite the palate pleaser.

Vinification:
After manual harvesting and de-stemming, soft pressing is carried out, extracting only 50% of the free-run must, then fermentation with indigenous yeasts begins without adding sulfur dioxide. The refermentation takes place in the bottle, due to the sugars and the residual yeasts, using the ancestral method without a subsequent disgorgement. The wine rests on the yeasts for the entire winter and is then put on the market without added sulphites.
Tasting:
Slightly misty pink in color showing violet reflections, with a soft andlight foam. Its bouquet reminds of raspberry, blackcurrant, small wild berries, notes of citrus fruits andthe typical hints of bread crust due to the yeasts. On the palate, it has an exuberant and lively attack,with a pleasantly fruity sip, closing with savory and refreshing sensations.
Try with:
A very versatile wine, ideal as an aperitif, to combine with a platter of cold cuts and cheeses, first and second fish courses and to be tried on dry pastries.
